This sauce is amazingly light! All ingredients are vegan. The apple replaces the sugar meaning the recipe has less calories and more fibre in one go. Great with Asian stir fry and brown rice.
Chop onion, garlic, ginger and apple. No need to chop everything very finely as it will all end up in the blender.
Fry the chopped onion, ginger and garlic in olive oil. Once golden, add the chopped apple and fry it until the apple caramelizes a bit and gets softer. Squeeze the ½ lemon and add the juice to the mixture. Add the rest of the ingredients.
Let the sauce simmer for 5 minutes, then mix everything with a blender. Add water during the process to change the consistency to your liking. Enjoy!
